A virgin olive oil does not have a more or less intense flavour due to the acidity. Acidity is a parameter that merely measures the degree of the oil’s deterioration. As with other factors, more acidity indicates less quality. Acidity does not determine the quality of a virgin olive oil alone

How can I conserve the quality of the oil?

Extra virgin olive oil is a “live” food which evolves over time. To conserve its quality, we recommend keeping it in a dry place, away from the heat. It is especially important to avoid exposing it to light and air for a long time, as these are factors that lead to oxidation or rancidity.
